Cafés Mers du Sud roasts this Italian-style espresso blend in Montréal, Québec, and sends it out whole bean in a 1.36 kg (3 lb) resealable pouch. WHAT'S IN THE CUP A medium roast built for double crema. The grounds pull a thick, opaque layer that sits on the shot instead of thinning out after a few seconds, with a cocoa-toned body, low acidity and no bitter aftertaste at the finish. Dark enough to stand up to milk, light enough to drink black without the scorched edge some darker roasts leave behind. HOW TO BREW IT Grind fine and tamp firm for a portafilter shot. Use your standard bean-to-cup setting in a super-automatic. Go coarser for a moka pot, French press or drip machine. If the cup comes out thin or watery, grind finer and increase the dose before changing anything else. The beans carry a light oil sheen from the roast, so keep to your machine's regular grinder and brew group maintenance routine. FRESHNESS AND STORAGE The pouch is valve-sealed: a one-way valve lets roasting gas escape without letting oxygen back in, which is what protects the aroma and density between roasting and your first scoop. After opening, press the air out, zip it shut and keep the bag in a cool, dark cupboard away from the stove. Whole bean holds its character far longer than pre-ground, so grind only what you are about to brew.
- Double Crema, Every Shot: This blend is built around the thick, opaque crema Italian espresso is known for. Your shot pulls with a dense golden layer on top, and milk drinks get a base that holds up under steamed foam.
- No Bitter Aftertaste: Roasted to a medium profile that stays off the burnt-toast end of the scale, it drinks smooth and low in acidity with no bitter finish, so it works black and stays balanced in a latte or cappuccino.
- Built for Your Machine: Grind fine for a portafilter, standard for a super-automatic, or coarser for a moka pot or drip brewer. The beans carry a light oil sheen from the roast, so keep your grinder on its usual maintenance schedule.
- Sealed Fresh, Zips Shut: A one-way valve lets roasting gas out without letting air in, holding aroma and density in the bag until you open it. The zip-top pouch then reseals, so the rest of the 1.36 kg keeps its character.
- Roasted in Montréal: Blended and roasted in Québec by an independent Canadian roaster, then packed in a 3 lb bag so daily espresso drinkers reorder far less often than with a small grocery-size bag of beans.
